Avocado Toast with Poached Eggs and Spinach

Ingredients:

  • Whole grain bread
  • Ripe avocado
  • Eggs
  • Baby spinach
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Toast the whole grain bread until golden brown.
  2. Mash the ripe avocado and spread it evenly on the toasted bread.
  3. In a pot of simmering water, carefully crack the eggs and poach them until the whites are set but the yolks are still runny.
  4. While the eggs are poaching, sauté the baby spinach in a little olive oil until wilted.
  5. Place the poached eggs on top of the avocado toast and season with salt and pepper.
  6. Serve with a side of sautéed spinach.
