Avocado Toast with Poached Eggs and Spinach
Ingredients:
- Whole grain bread
- Ripe avocado
- Eggs
- Baby spinach
- Olive oil
- Salt and pepper to taste
Instructions:
- Toast the whole grain bread until golden brown.
- Mash the ripe avocado and spread it evenly on the toasted bread.
- In a pot of simmering water, carefully crack the eggs and poach them until the whites are set but the yolks are still runny.
- While the eggs are poaching, sauté the baby spinach in a little olive oil until wilted.
- Place the poached eggs on top of the avocado toast and season with salt and pepper.
- Serve with a side of sautéed spinach.
